Fresh, light summer recipe: fruity salad

The sun! In the sky and on our plates. So what could be better than a fresh, light and tasty salad? As we prefer to spend time outdoors rather than in the kitchen, this is also the season for quick recipes. Our three 12H03 foodistas have just what you need: a fruity salad!

Fruity salad

(for two people) 

  • 140 g quinoa 
  • 120 g chickpeas 
  • 100 g cherry tomatoes 
  • 1 lawyer 
  • 1 nectarine 
  • A few cherries 
  • A few blackberries 
  • Basil
  • For the seasoning : 
  • 2 tablespoons olive oil @parcelle26 
  • 2 tablespoons balsamic vinegar 
  • 1 tablespoon honey 
  • Salt and pepper 

Cook the quinoa according to package directions and leave to cool. 

Drain the chickpeas. 

Rinse the cherry tomatoes and halve. 

Slice the avocado and nectarine, then pit and halve the cherries. 

In a @maisonvessel bowl, combine the quinoa, chickpeas and cherry tomatoes. Add avocado and nectarine slices, cherries, blackberries and basil. 

To spice up your salad even more, you can also add feta cheese and cashew nuts! 

For the dressing, in a small bowl, combine the olive oil, balsamic vinegar, honey, salt and pepper. Pour over the salad, toss and enjoy!
