Fresh, light recipe for summer: fruity salad

The sun! In the sky as well as in our plates. So what could be better than a fresh, light and tasty salad? Since we prefer to spend time outdoors rather than in the kitchen, the season is also about quick recipes. Our three 12H03 foodistas have just what you need: a fruity salad!

Fruit salad

(for two people) 

  • 140 g of quinoa 
  • 120 g chickpeas 
  • 100 g cherry tomatoes 
  • 1 lawyer 
  • 1 nectarine 
  • Some cherries 
  • Some blackberries 
  • Basil
  • For the seasoning: 
  • 2 tablespoons of olive oil @parcelle26 
  • 2 tablespoons of balsamic vinegar 
  • 1 tablespoon of honey 
  • Salt, pepper 

Cook quinoa according to package directions and let cool. 

Drain the chickpeas. 

Rinse the cherry tomatoes and cut them in half. 

Slice the avocado and nectarine, then pit the cherries and cut them in half. 

In a @maisonvessel bowl, combine quinoa, chickpeas, cherry tomatoes. Add avocado and nectarine slices, cherries, blackberries and basil. 

To spice up your salad even more, you can also add feta cheese and cashews! 

For the dressing, in a small bowl, mix the olive oil, balsamic vinegar, honey, salt and pepper. Pour over the salad, mix and enjoy!
