Fresh and greedy recipe | Avocado coconut lime pie

New recipe from our 3 happy foodistas 12H03 for the arrival of spring: the avocado coconut lime pie. 

Renowned for its many nutritional qualities, the avocado is enriched in more than twenty minerals and vitamins, as well as in essential fatty acids which allow to fight effectively against the drying and the ageing of the skin .

The limeis rich in vitamin C, copper, iron and fiber. It also provides vitamins of the B group, calcium, potassium, phosphorus and magnesium. It promotes liver activity and a good transit, allowing the elimination of toxins. Lime slows down the aging of the tissues and allows to keep a fresh complexion!

The list of ingredients to use for the pie dough 

For 4 tarts

  • 60g of whole almonds
  • 150g of dates
  • 20g of grated coconut
  • 2 spoons of melted coconut oil

The list of ingredients to use for the avocado lime filling 

  • 1 ripe avocado 
  • 1 organic lime (all juice and half zest)
  • 2 tablespoons of agave syrup
  • 1 tablespoon of coconut milk (if possible the hard part)
  • 1 tablespoon of melted coconut oil

Finishes

  • Grated coconut
  • Edible flowers
  • 1 lime 

For the dough

Blend the almonds to a powder. Then add the dates twice. Pour into a bowl and add the coconut and melted coconut oil and mix well. Separate the dough into 4 parts and place in 4 tartlet pans, preferably with removable bottoms. Press the dough well on the bottom and sides of the mould and keep in a cool place for at least 1 hour.

For the garnish

In a blender, blend all ingredients together to obtain a smooth creamy mixture.

Place the cream in each tartlet, smoothing with a spatula, and chill for at least 1 hour before finishing. 

Finishes

Gently unmold the tarts and arrange thin slices of lime, shredded coconut and selected edible flowers.

This avocado pie is best served chilled.
